Those beautiful intense colors on your plate, wow! The taste is slightly sweeter than normal beet. Roasting in the oven brings out the added, natural sweetness. Prepare the rest of the food, clean up things or just read a book.

Ingredients (for 4 servings)

  • 8 (yellow) beetroot of the same size
  • 8 small cloves garlic
  • dash of olive oil
  • 2 tablespoons balsamic vinegar
  • little sea salt and freshly ground pepper
  • spices: few sprigs of fresh thyme or rosemary
  • balsamic syrup and soft goat cheese
  • aluminum foil

How do you prepare

Preheat the oven to 200 degrees. Wash the beets thoroughly and dry with paper towels.

Crush the garlic with peel. Make a dressing of olive oil, balsamic vinegar, salt, pepper and herbs (leaves only).

Capture every beetroot on a piece of aluminum foil, pour 1 tablespoon of dressing over, 1 clove garlic and fold. Put them in the middle of the oven and leave for 1 hour until done. Check once with a skewer. Then let it cool slightly and gently with your fingers, pull the sheets off.

Cut into slices and place on large plate or bowl. Scatter some soft goat cheese over put some balsamic syrup.

Tip: Delicious with the grated orange peel dressing.

Recipe #2 Roasted vegetables from oven

Vegetables have so much flavor and it also further filling. So you're less likely to keep eating all the time. Vegetables are often neglected, and that's really a shame. You can actually use all kinds of vegetables as a side dish. Be sure to try out the fennel. A vegetable that's less likely to appear on your table, but oh it's so delicious from the oven.

It is convenient that you can put the vegetables in the oven and you no longer to need to baby-sit the stuff. Or, I think actually more convenient, grate the vegetables in advance. Ingredients (for 4 servings)

  • 1 bell pepper
  • 1 zucchini
  • 1 eggplant
  • 1 fennel
  • 2 red onions
  • 3 cloves garlic
  • 1 package cherry tomatoes on the branch
  • olive oil
  • salt and pepper
  • Fresh herbs: rosemary and few tasks or thyme. Optional 1 tablespoon Italian seasoning

How do you prepare

Preheat the oven to 180 degrees. Cut the peppers, zucchini, eggplant and fennel into slices half a centimeter. Cut the onion into large rings and crush (let sit skins from) the garlic.

Put all the vegetables in a baking dish and coat with olive oil. For this I pour olive oil in a bowl and use a silicone brush to smear it. Place the fresh herbs on it or sprinkle the dried herbs on top. Add salt and pepper to taste.

Put 30-40 minutes in the oven. After 15 minutes, add the tomatoes.

It's done!

Recipe #3 Carrots from the oven

Do you sometimes buy the same (possibly boring) vegetables ? Especially if you are very busy and have no idea what to cook? Vegetables that are not so common, such as Chioggia beet, parsnip or carrots add extra taste and flavor to otherwise not-so-exciting daily meals.

The herbs give this dish just a little extra "touch". This tasty recipe can also be made with carrots. You can also serve with a slice of grilled white fish.

Ingredients (for 4 servings)

  • 1 container rainbow add carrot (600 grams) of forest carrots
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • 1 teaspoon garlic
  • 1 teaspoon ginger
  • 1 tablespoon honey
  • 1.5 tablespoon olive oil

How do you prepare

Preheat the oven to 180 degrees. Peel the carrots or carrots with a vegetable peeler. Please leave a fragment of foliage that looks so pretty on your plate. Cut thick roots possibly in half, so that everything is done at once.

I am not a great fan of the way plain boiled potatoes taste. This is probably because I'm traditionally raised with potato-vegetable-meat meals. However, potatoes from the oven make a delicious exception.

Ingredients (for 4 servings)

  • 1/2 kg potatoes
  • half organic lemon
  • 2-3 tablespoons olive oil
  • sea ​​salt

How do you prepare

Scrub the potatoes clean in the water. If necessary, use a scouring pad. Cut the potatoes through, into equal halves. Boil for 5 minutes in as little water as possible, drain and let the potatoes dry steam without cover. Meanwhile, preheat the oven to 200 degrees.

Grate the lemon. Make a dressing of lemon zest, olive oil and pinch of sea salt. Pour the dressing over the dry potatoes and toss together well so that each piece has a bit of that tasty dressing.

Put in the oven for 20 minutes. Prick with a fork to check whether they are cooked.

Recipe #5 Salmon from the oven with pesto

Preparing fish is not as complicated as I used to think. Salmon is a versatile fish that can be cooked easily. One grilling or baking with a little salt or pepper is generally all you need to do. It tastes great with a potato from the oven and other vegetables. Salmon from the oven is completely easy.

For the pesto , I would advise you to make it for yourself. You will not need all the home made pesto in this recipe. Use the rest on a sandwich with grilled zucchini or store in the freezer in an ice cube container.

The homemade pesto makes the salmon taste special.

Ingredients (for 4 servings)

  • 4 pieces of salmon fillet 100-150 grams, skinless
  • a bunch of basil
  • 50g pine nuts
  • 50g pecorino (sheep cheese) or Parmesan cheese
  • 1 clove garlic
  • 75-100 ml soft extra virgin olive oil
  • pinch of pepper and salt to taste
  • parchment paper and kitchen twine

How do you prepare

Preheat the oven to 180 degrees. Add the basil, pine nuts, cheese, garlic, olive oil and salt and pepper in a food processor and puree to a fine mix.

Lay each piece of salmon fillet on a piece of parchment paper. Lubricate with a generous tablespoon of homemade pesto. Tie the end close to an (open) boat.

Put 10 minutes in the oven. Serve immediately.

Tip: You do not have to wrap the salmon. You can do it in a baking dish (little olive oil into the bowl) or yarn on aluminum foil.
